Ingredients :
For Ras
1 litre Buffalo Milk for Ras
Saffron
Chopped Pistachios
5tbsp Sugar
1/2tsp Cardamom Powder
Fpr Malai
1 litre Cow Milk for Malai
2tbsp Vinegar
2tbsp Water
1.5 cups Water
1tsp Cornflour
1/4tsp Cardamom Powder
250g Sugar
5 - 6 Cups Water
Method -
1. Heat buffalo milk in kadhai. Bring to a boil. Add kesar, pista, almonds, sugar and cardamom powder. Mix well and bring to a boil.
2. Heat cow milk and bring to a boil. Turn off the flame. Stir it for a minute continuously to remove the steam.
3. Mix vinegar and water and add little by little and stir till the milk has spilt.
4. Add 1&1/2 cup room temp. water and mix well.
5. Strain the whey and queeze out the water through a muslin cloth.
6. Remove on a parat and knead it using the ends of your palm.
7. Add cornflour and cardamom powder and knead it again.
8. Make small balls and flatten them to make it look like discs.
9. In a wide vessel, add sugar and water. Bring to a boil on high flame.
10. Add the prepared malai discs one by one.
11. Cook on high flame for 10 - 12 mins. Remove and put in ice water.
12. Let it sit for 20 mins in the ice cold water.
13. After 20 mins, squeeze the water and put it in the prepared ras. Let it sit in th ras for 4 - 5 hours and its ready to eat.
