Qureshi Kebab Recipe | Juicy Mughlai Style Seekh Kebabs at Home

Juicy, smoky Qureshi Kebabs bursting with rich Mughlai flavors in every bite.

Recipe

Ingredients :
500g Mutton Mince + 50g Fat
1 Onion (grated and squeezed)
1tbsp Ginger Garlic Paste
5 Green Chllies (crushed)
1tbsp Crushed Coriander s
Seeds
1tbsp Chilli Flakes
1tsp Cumin Powder
1.5tsp Red Chilli Powder
1tsp Chaat Masala
1tsp Garam Masala
1/2tsp Turmeric Powder
1tsp Black Pepper Powder
1tsp Salt
1 Lemon Juice
4 - 5 Roasted Chickpea Flour
1 - 2tbsp Oil To Fry

Chutney :
Handful of Coriander Leaves
Half Handful Mint Leaves
2 Chillies
1 Garlic Clove
Small Pc of Onion
1/4tsp Salt
1tbsp Sugar
1/4tsp Black Salt
1/2tsp Cumin Powder
Half Lemon Juice
1/4 cup Curd
2 Ice Cubes

Method :
1. Grind the mutton mince and fat in a chopped 2 - 3 times till its fine and well blended.
2. Add all ingredients mentioned except oil. Mix well and marinate for 1 hour.
3. Prepare green chutney, adding all ingredients mentioned under chutney into a blender and Grinding them till chutney consistency. Remove and set aside.
4. Make kebabs using a seekh or a pencil. Cook on direct flame till the mixture looks dried on the top. Remove kebabs from seekh.
5. Add 1 - 2tbsp Oil in a pan and fry the seekh kebabs for 6 - 8 mins.
6. Serve with onion rings and prepared chutney.
