Mix Veg Handi Recipe | Restaurant Style Creamy Veg Handi at Home

Recipe

Ingredients:
Spice mix
1tsp Cumin Seeds
1tsp Fennel Seeds
1/2tsp Black Pepper Corns
2 - 3 Red Chillies
2tsp Coriander Seeds

For Veg Handi
Half Carrot
7 - 8 French Beans
3 - 4 Cauliflower Florets
1/4 Cup Green Peas
Half Onion
Half Capsicum
100g Paneer
2 - 3tbsp Oil
1tsp Cumin Seeds
1 Onion Finely Choped
1tbsp Ginger Garlic paste
2 Tomatoes Puree
1/2tsp Turmeric Powder
1tsp K. Red Chilli Powder
Salt as per taste
1 Potato (cut into cubes & fried)
1/2 Cup Water
1tsp Kasturi Methi
A little Fresh Cream
1/2tsp Garam Masala
1tsp Sugar
Finely chopped coriander for Garnish

Method:
1. Roast the dry spices and grind to fine powder.
2. Fry veggies and remove.
3. Fry paneer and remove
4. Heat oil in a pan. Add cumin seeds. Let it splutter
5. Add chopped onions and saute till translucent.
6. Add ginger garlic paste and saute for a minute.
7. Add tomato puree and turmeric, red chilli powder and salt. Cook till oil seperates.
8. Add veggies and mix. Cover and cook till veggies are soft.
9. Add fried paneer, 1tbsp of spice mix. Mix well.
10. Add a little water. Bring to a boil.
11. Add kasuri methi, fresh cream, garam masala, sugar and mix.
12. Garnish with chopped coriander
