Ingredients:
Seekh Kebab
500g Chicken Thighs
4tbsp Onion (finely cut and juices squeezed out)
8 - 10 Garlic Cloves
2 inch Ginger
6 Green Chillies
1/4 Cup Coriander Leaves
1.5tsp Salt as per Taste
1tsp Cumin Powder
1/2tsp Garam Masala
1tsp Cardamom Powder
2tsp Shan Seekh Kebab Masala
2 Egg Whites
Method:
1. Chop onion and squeeze the juice from it.
2. Add to a food processor chicken thighs, garlic, ginger, green chillies, salt, garam masala, cumin powder, cardamom powder, shan kebab masala and egg white. Make fine paste. Marinate for 30 mins.
3. Make Seekh Kebabs as shown in the video
4. Cook seekh kebabs on direct flame for 1 - 2 mins till char marks are visible.
5. Remove from seekh.
6. Heat some oil in a pan. Add kebabs and fry them on low medium flame for 3 - 4 mins or till chicken is cooked well.
For Rice Preparation
400 - 500g Basmati Rice
Whole spices (2 Bay Leaf, 1 Star Anise, 3 Cloves, 3 Cardamoms, 1 Cinnamon Stick & 8 - 10 Black Pepper Corns
1tsp Shah Jeera
Salt as per taste
Juice of Half Lemon
1tbsp Oil
Method:
1. Wash rice 2 - 3 times ans soak for 30 mins
2. Take 3 litre water in a vessel. Add whole spices, shahi jeera, salt, lemon juice and oil. Bring to a boil.
2. Add soaked rice and cook on hi flame for 5 mins. Rice should be 60 % cooked. Strain rice.
For Biryani Gravy
1/2 Cup Oil
Whole spices (2 Bay Leaf, 1 Cinnamon Stick, 2 Black Cardamom, 4 Green Cardamoms, 4 Cloves)
2 Onion
2tbsp Ginger Garlic paste
1tbsp Green Chilli Paste
1/2 Cup Mayonnaise
1/2 Cup Curd
1/4 cup Khoya
1/2 Cup Fresh Cream
1/2 Cup Milk
1tsp Salt
1tsp Chicken Powder
2tsp White Pepper Powder
1tsp Garam Masala
1/2tbsp Sugar
1/4 Cup Water
Method:
1. Heat Oil in a pan, add whole spices and saute for a few seconds
2. Add onion and fry till light golden brown
3. Add ginger garlic paste. Saute for 2 mins
4. Add green chilli paste. Saute for 2 mins. Turn off flame.
5. Add mayo and mix well.
6. Add curd and whisk till smooth.
7. Add cream and milk. Mix well.
8. Add salt, white pepper, garam masala and sugar. Mix well.
9. Add water and bring to a boil.
10. Add seekh kebabs and mix well. Cook for 2 mins.
For Biryani Assembling
2 Fried Potato
Chopped Coriander
Birista
1tsp Kewra water
2 tbsp Ghee
Method:
1. Add malai gravy to biryani pot.
2. Add the fried potatoe and some chopped coriander
3. Add rice.
4. Pour the ghee, sprinkle some birista, chopped coriander, kewra water, vanaspati ghee. Cover with lid and keep heavy weight on it.
6. Place on tawa and cook in high for 2 - 3 mins and then cook on low for 15 mins.
7. Allow it to rest for atleast 15 mins and then serve.
