Kurkure Chicken Spring Rolls
Filling Ingredients :
2 - 3tbsp Oil
1tbsp Garlic
1/2tbsp Ginger
2 Chillies
1 Cup Cabbage
1 Capsicum
6 - 7 French Beans
1 Carrot
3 Spring Onion Whites
2 Cup Boiled & Shredded Chicken
Salt as per taste
1tsp Black Pepper Powder
1tsp Chicken Powder
1tsp Sugar
1/2tbsp Dark Soy
1/2tbsp Red Chilli Sauce
1/2tbsp Green Chilli Sauce
1tbsp Schezwan Sauce
1/2tbsp White Vinegar
2tbsp Tomato Sauce
Spring Roll Sheet
Ingredients :
100g All Purpose Flour
100g Cornflour
1/2tsp Salt
1 Egg
250 - 300ml Water
For sealing:
2tbsp All Purpose Flour
Water as required to make a thick paste
For Batter
1 Cup All Purpose Flour
1 Cup Cornflour
1 Egg
1/2tsp Salt
Water as required to make a semi thick batter
Smashed Cornflakes to coat
Method:
1. Heat oil in a pan. Add garlic, ginger and chillies. Saute for a minute.
2. Add all veggies and chicken. Add salt,sugar,black pepper, dark soy, red chilli sauce, schezwan sauce, green chilli sauce and white vinegar. Mix well. Add tomato sauce and mix.
3. Mix the ingredients mentioned under spring roll sheets and beat it well.
4. Heat a pan. Pour a laddle of batter and swirl the pan to spread the batter. Pour out the excess batter back into the bowl.
5. Cook on high moving the pan on the flame so that it does not burn in the centre.
6. When the sheet leaves the sides of the pan. Flip it out on a surface dusted with cornflour to avoid sticking. Dust some more cornflour over it. So that the other sheets dont stick to each other.
7. Cut out the excess and prepare the spring rolls.
8. Mix flour and water to make thick paste to seal the spring rolls
9. Place filling on sheet.
10. Apply flour and water paste on edges.
11. Cover the filling and make a tight roll. Seal with more paste if required.
12. In a bowl, add all purpose flour, cornflour, salt, eggs and water as required to maje a semi thick batter. Dip the spring rolls in batter and coat with smashed cornflakes. Can be freezed and stored for upto a week at this time.
13. Deep fry in hot oil on medium flame till crisp and golden light brown
