Korean Chicken Bao Buns Recipe | Crispy Sweet & Spicy Chicken Bao

Ingredients :
Dough :
400g All Purpose Flour
7g Instant Yeast
40g Sugar
1tsp Baking Powder
3tbsp Oil
250ml Warm Milk
Warm Water As Required

Korean Chicken :
500g Boneless pcs Chicken Thighs & breast
1/2tsp Salt
1/2tsp Pepper
1tsp Garlic Powder
1/2tsp Ginger Powder
1/2tsp Chicken Powder
1 Egg
5tbsp Cornflour
3tbsp All Purpose Flour
Oil to Deep Fry

Sauce :
2 cubes Butter
1tbsp Garlic
1tbsp Gochujang
1/2tbsp Gochugaru
2tbsp Tomato Sauce
1tbsp Light Soya Sauce
1tbsp Brown Sugar
1/2tbsp Honey
2tsp Vinegar
1tsp Sesame Oil

Garnish :
Sesame Seeds
Spring Onion Greens
Chopped Onion
Chopped Cucumber

Method :
1. Add the flour, instant yeast, sugar, baking powder, salt, oil, warm milk and water as requirered to bring the flour together to form a dough. Now to knead till the edges are smooth.
2. Grease the bowl with oil and place the dough in it. Cover with cling film and allow it to double in size.
3. Cut chicken into small cubes. Add salt, pepper, garlic and ginger powders & chicken powder. Mix well. Marinate for 10 mins.
4. Add an egg, cornflour and egg. Mix it enough to coat the chicken in flour. Do not over mix to make it look like too sticky.
5. Deep fry for 3 - 4 mins. Remove and set aside. Double fry for few seconds to make it extra crispy.
5. Toast the sesame seeds till they start crackling.
6. In a pan, add butter and garlic. Saute for a few seconds.
7. Add gochujang, gochugaru, tomato sauce, light soya sauce, brown sugar, honey, vinegar and sesame oil. Mix well and bring to a boil.
8. Add fried chicken and mix it well.
9. Once the dough double in size, divide it into smaller portions.
10. Roll it out tp half inch thickness. Cut circles with a biscuit cutter.
11. Oil the surface and fold them as shown in the video.
12. Allow it double in size for 10 mins.
13. Steam them for 8 - 10 mins.
14. Open them and place chicken on it.
15. Garnish with sesame seeds, chopped onions, cucumber and spring onion greens and Enjoy.
