Chicken Bread Pockets

Ingredients :
2tbsp Oil
1tbsp Garlic
250g Chicken Thighs (cut into cubes)
1/2tsp Salt
1/2tsp Black Pepper Powder
1/2tsp Chilli Flakes
1/2tsp Sugar
1/2tsp Chicken Powder
1/2tsp Mexican Seasoning
1 Sachet Peri Peri Spice Mix
1/2 Onion
1/2 Capsicum
1/2 Tomato (Deseeded)
2tbsp Mozzarella Cheese
12 pc Slice Bread
2 Eggs
1/4tsp Salt
Bread Crumbs
Oil to Fry
Batavia or Lettuce Ice Berg Leaves

Mayo drizzle
1/4 cup Mayo
1/4 cup Tomato Sauce
1/2tsp Black Pepper

Method :
1. Heat oil in a pan. Add chopped garlic. Saute for a few seconds.
2. Add chicken and cook till it changes color.
3. Add mentioned salt and spices and mix well. Cook till chicken is completely cooked.
4. Add sliced onion, capsicum, deseeded tomato and mozzarella cheese. Mix well and turn off flame.
5. Roll slice bread thin. Cut out circles using bread cutter.
6. Beat the eggs adding salt to it.
7. Coat the bread with egg was and panko bread crumbs.
8. Fry till light golden brown.
9. Cut the bread from middle.
10. Stuff if with batavia leaves or lettuce and filling. You can have it as it is or you can mix mayo, sauce and black pepper powder and drizzle it on top. Enjoy !!!
