Ingredients :
750g Chicken
3 Onions
3 Tomatoes
1.5tsp Salt
1.5tbsp Ginger Garlic Paste
3/4tbsp Kasturi Methi
250g Beaten Curd
1/4tsp Orange Red Food Color mixed with 1tbsp Water
3tbsp Oil
Spice Mix -
1.5tbsp Coriander Seeds
3/4tbsp Cumin Seeds
7 Green Cardamoms
3 Cinnamon Sticks
6 Cloves
30 Black Pepper Corns
6 Dried Red Chillies
Method :
1. Dry Roast spices for a minute and grind to a fine powder.
2. Deep fry thinly sliced onions till lighe golden brown. Remove them on a kitchen towel.
3. Grind fried onions ans tomatoes with some water to a fine paste.
4. Marinate chicken with salt, ginger garlic paste, prepared spice mix, kasturi methi, beaten curds, fried onion & tomato paste and food color for 1 hour.
5. Heat oil in a vessel. Add chicken and fry on high heat for 5 mins stirring continuously so that the chicken does not stick to the bottom of the pan.
6. Now add the marinade and mix well. Bring to a boil.
7. Cover & cook for 20 mins stirring in between so that the chicken and masala does not stick to the bottom of the pan.
8. After 20 mins, place a small bowl with hot charcoals on it. Pour 1 tsp ghee. Cover lid & give smoke for 1 minute only. Turn off flame
9. Serve with basmati rice & russian salad.
